Ingredients
  • 1/4 cup chia seeds
  • 1.5 cup of coconut milk
  • 2 scoops Vivamom Vanilla powder
  • 4 tablespoons of mango pulp

Serving - 4 small bowls

Preparation

Simply combine the chia seeds, coconut milk and Vivamom Vanilla powder, stir and put it into the fridge. After about 30 minutes give the mixture a stir and transfer to bowl.

  • 250ml coconut milk

Ingredients
  • 1 cup of walnuts
  • 1/2 cup of dried unsweetened coconut
  • 1 cup of soft dates
  • 1 dessert spoon of honey

Preparation

Process the walnuts and coconut in a food processor until finely ground. Add all the other ingredients and process until thoroughly mixed into a thick paste.

Scoop out heaped teaspoonful of paste and roll between your hands to form walnut sized balls. Roll half the balls in desiccated coconut and half the balls in cocoa powder.

Place on a baking sheet lined with butter paper / baking paper and chill in the fridge before serving.

Store a jar of balls in the fridge.

  • 3/4 cup powdered quick cooking rolled oats
  • 3/4 cup finely grated apple
  • 2 cups low-fat or double toned milk

Preparation

  • 2 cups grated carrots
  • 10 to 12 almonds, soaked in water for 15 minutes
  • 4 to 5 cashew nuts
  • 1/2tsp cardamom powder
  • 3 cups milk (preferably double-toned)
  • 2 Tbsp raisins
  • 1/4 tsp ghee (optional)
  • Sugar to taste

Preparation

In a heavy bottomed saucepan heat the ghee and lightly fry the carrots. Next put in the milk, sugar and cardamom powder. Keep on low heat and slowly bring to a boil while stirring occasionally.

Meanwhile, peel half of the soaked almonds and grind to a smooth paste with a little milk. Add this paste to the mixture in the pan. Continue to cook for a few more minutes while stirring continuously. Remove from the flame when you get the desired consistency.

Add Vivamom Vanilla powder and mix well.

Garnish with chopped almonds, raisins and cashew nuts and serve warm or chilled.

  • 1 cup fox nut (makhana)
  • 2 cups double toned milk
  • 1/2 tsp cardamom powder
  • 6 to 10 almonds
  • 5 to 6 cashews
  • 1 Tbsp raisins
  • Sugar to taste

Preparation

Take a heavy bottomed pan and fry the fox nuts in ghee until they are crunchy. Remove from the flame and allow to cool. Once cool, grind them into a coarse powder and keep aside.

In another pan, bring the milk to a boil and add in the fox nut and cardamom powders. Simmer on a low flame for a few minutes. Next add the sugar and continue to cook for a few minutes more while stirring occasionally. Allow the mixture to thicken to the desired consistency.

Add in cashews, almonds and raisins. Stir for a minute or so and remove from the flame. Add Vivamom Vanilla powder and mix well.

Serve hot or chilled.

  • 1/2 kg thick curd
  • A few saffron (kesar) strands
  • 1 tsp cardamom powder
  • 4 scoops of Vivamom Vanilla powder
  • A few pistachios and almonds, for garnishing
  • Sugar to taste

Preparation

Place the curd in a clean muslin cloth and wrap it tightly. Next, put the cloth in a colander or large strainer. Place the strainer over a large dish or container so that the liquid (whey) from the curd can drain out and collect below. Leave this in the fridge for 3 to 4 hours (or overnight) until all the liquid drains away.

In a cup take 1 teaspoon of warm water and put in the saffron strands. Allow to infuse.

Once the curd is ready, mix the hung curd, Vivamom Vanilla powder, powdered sugar, saffron mixture and cardamom powder together in a large bowl. Churn using a hand blender or wooden spoon until you get a smooth creamy texture.

Garnish with the dried fruits and serve chilled.

Tip: For a fruity shrikhand, add in the pulp of different fruits such as mango, apple, and strawberry.

  • 1/2 cup mixed dried fruits - almonds, cashews, and pistachios
  • 1 tsp cardamom powder

Preparation

Heat the ghee in a large saucepan and fry the nuts for a few minutes.

Continue to cook until the milk evaporates and the mixture appears flakey. Remove from the flame, add Vivamom vanilla powder and mix well. Sprinkle the cardamom powder. Garnish with a few nuts and raisins. Serve hot.

  • 1/2 tsp cardamom powder
  • 4 to 5 saffron strands
  • 6-10 almonds

Preparation

Soak the saffron strands in half a cup of warm water and allow to infuse.

Meanwhile take a heavy bottomed pan and dry roast the semolina until it turns golden brown. Add the water, sugar and cook until the sugar dissolves. Keep stirring occasionally so that the mixture doesn't stick to the sides.

Next, add the saffron infused water and cook until you get the halwa consistency of your choice. Top it with ghee and mix well.

  • 1 cup sesame seeds
  • 2 cups powdered jaggery
  • 1/4 cup peanuts
  • Vivamom Vanilla powder - 4 scoops

Preparation

Dry roast sesame seeds for a few minutes until they crackle and change colour. Remove from the pan and keep them aside to cool.

Grind the jaggery and cardamom powder in a grinder to make a powder. Take one tsp of this powder and soak in one fourth cup of warm water. This syrup is needed to make the laddoos.

Dry roast the peanuts. Once cool, remove the skin and coarsely crush them and add this to the jaggery powder. Add in the roasted sesame seeds and Vivamom Vanilla powder and mix well.

Apply a little oil and jaggery syrup on your palms and take small portions of the mixture and shape them into ladoos. Store them in air-tight containers.
